- This analysis evaluated the association between dietary intake of processed meat, unprocessed red meat, poultry, and fish and incident cardiovascular disease (CVD) and all-cause mortality in 29,682 adults (mean age, 53.7 years) from six US prospective cohort studies. Baseline dietary assessment was obtained between 1985 and 2002, and patients were subsequently followed for a median 19.0 years. Greater intake of processed meat, unprocessed red meat, and poultry—but not fish—were all significantly associated with a small increased risk of incident CVD. Greater intake of processed meat or unprocessed red meat—but not poultry or fish—was significantly associated with a small increased risk of all-cause mortality.
